Healthy and Simple Vegetarian Recipes

Hello friends! I am going to keep this short and sweet. :) I have been vegetarian for about 6 years now and I frequently get asked questions about what sort of meals I enjoy making. I have put together four recipes below of my favorite go-to vegetarian meals to give you guys some inspiration in the kitchen. I hope you enjoy! 

Breakfast of Champions: "Gourmet" Avocado Toast

Ingredients: 
  • 1-2 slices of bread
  • ​1 Avocado
  • 1-2 eggs
  • Hummus of choice
  • 1 tomato
  • Seasonings of choice (I prefer pepper, garlic salt & a touch of turmeric) ​

How-to: 
  1. Start by frying 1-2 eggs depending on if you want 1 or 2 pieces of toast
  2. Toast your bread to your liking (obviously lol) 
  3. Cut a few slices of tomato (I typically do 2 slices per 1 piece of toast)
  4. Spread a good amount of hummus and avocado on the toast
  5. Add the eggs and tomato slice and enjoy! ​

​Benefits: Avocado is loaded with mono-saturated fatty acids and has more potassium than bananas! 

Delicious Quinoa Veggie Burger

 Ingredients:
  • 1 Veggie Patty of your choice - I prefer the Cowboy quinoa burgers from Trader Joe's (They are the best veggies burgers I have ever tasted)
  • Spinach 
  • Tomato
  • Cheese (Aged white cheddar is the bomb)
  • Wheat bun
How-to:​
  1. Prepare the patty by following the cooking directions 
  2. Toast your wheat bun
  3. Cut a few fresh slices of tomato 
  4. Assemble and add any other toppings of your choice! 
  5. Enjoy your fruit and/or veggie of choice on the side. I like to have a fresh apple or some carrots with ranch!

​Benefits: Quinoa is gluten- free, high in protein and contains ALL 9 essential amino acids!

BBQ pulled Jackfruit Sandwich (serves 3-4)

Ingredients:
  • ​1 Can of Trader Joe's green jackfruit in brine (should be available at other supermarkets if you do not live near a TJ's) 
  • 1/4 cup veggie broth (or water as a substitute)
  • 2 TBSP olive oil (or your fave oil)
  • Your choice of BBQ sauce 
  • Optional: 1/4 diced onion
  • Bun of your choice 
How-to:
  1. Add oil to skillet
  2. Drain jackfruit and place in pan along with the veggie broth and diced onion 
  3. Simmer on medium heat for 10-15 minutes while stirring occasionally 
  4. The jackfruit will take on a "meaty" texture and should now be easily shred able with a spatula 
  5. Add BBQ sauce and let the jackfruit absorb the flavors for  an additional 5 minutes
  6. Place a scoop of the jackfruit on a toasted bun and enjoy with your fave toppings!            

​This sandwich goes great with a fresh side of coleslaw! 

​Benefits: Jackfruit helps to boost the immune system, lower cholesterol, improve digestion and much more!  

Meatless Chicken and Veggie Stir Fry

Ingredients:
  • 10 Oz. bag of meatless chicken (Quorn meatless chicken is the best)
  • Assorted fresh veggies or one bag of frozen stir-fry veggie mix
  • General Tsao stir-fry sauce or your fave stir-fry sauce
  • Long grain wild rice 
How-to:
  1. Simmer meatless chicken in an oiled skillet until golden brown (10-12 min)
  2. Add veggies and sauce to the pan
  3. Simmer an additional 10 minutes on low heat or until veggies are fully cooked
  4. Season with salt and pepper
  5. Great enjoyed alone or atop a bowl of wild grain rice!

​Benefits: One cup of this meatless chicken has 10 grams of protein! Plus with the veggies, you are getting a very healthy meal in just around 20 minutes!
